Great little pasta dish

I was hungry and had no clue what to eat today. Actually I had a clue, and it included the spinach that had gone bad in the fridge. But then I discovered a pork chop, and adjusted my recipe. Turned out really well:

Boil water for pasta & cook farfalle, penne or whatever
Slice a pork chop in thin small slices, fry them up in a pan and reserve on a plate.
In the pan, add some oil and fry up a shallot, garlic clove, mushroom and cherry tomatoes in quarters until soft.
Give the pan a splash of white wine, let it reduce a little, then add a teaspoon of mustard
Add a tablespoon of creme fraiche, stir that til it mixes well, then put the pork in it.
Optionally add some chopped walnuts, and let it simmer while the pasta cooks.
Drain the pasta, and right before serving stir some chopped chives into the sauce. Mix it all up.
